Quick Breads

I love to make those "quick breads" (they are called that, but some are not real quick to make lol) that you bake in a loaf pan.  My favorite is Lemon Bread:

1-1/2 cups Bisquick baking mix

Grated rind of one lemon (don't grate too deep--you only want the yellow part, not the white underneath)

1/2 cup (1 stick) butter or margarine, softened

1 cup sugar

2 eggs

1/2 cup milk

2 teaspoons Lemon Extract

Preheat oven to 350'.  Stir together Bisquick and grated lemon rind.  Leave the lemon in a warm place while you bake the bread.  In another bowl cream together butter and sugar until fluffy.  Add eggs one at a time, beating well after each addition.  Add extract.  Add Bisquick mixture alternately with milk; pour into a well-buttered loaf pan (I use Pam cooking spray to grease all my baking dishes) and bake for about 50-60 minutes or until a toothpick inserted in center comes out clean.

Dissolve 1/2 cup confectioners' (powdered) sugar in the fresh lemon juice over low heat.  Pierce the top of the warm loaf with a fork and pour the topping over the bread.  Let cool at least 30 minutes in pan.  Tongue out

I am seriously going to your Bisquit recipe. My children & I love breads.  We voted not long ago on the one food we would never want to live without, and it was bread!

I tried a recipe for lemon bread made with yogurt that I found online at taste.com.au. (one of my favorite recipe websites!) It is yummy!

I really want to make beer bread. I found a really nice looking recipe for a cheddar-dill one, if I can only find it...

But long story short, baking is fun. Even though I, personally, suck at it.
