Vegan Suggestions for Autreat Menu? (Input opportunity!)

Hey guys! For those that don't know, because of the moral leanings of the person who pays for the food for Autreat, then menu is 100% Vegan. (Though since it IS on a college campus, us omnivores can always order delivery, but that's not on the meal plan.) 

The thing is that the kitchen on site needs some better recipes to use, so Autreat folks are asking around. I'll post the announcement that went out on list here:

 Several of the feedback responses on the Autreat 2009 menu suggested that the respondents knew better recipes for either similar dishes (such as tofu scramble) or different dishes that would be better than what we had.

 I think the chef would be quite open to accepting suggestions. So let's give him some. Does anyone have any vegan recipes to recommend, either for a single dish or an entire meal?

What I'd like to see happen is this:

 People suggest vegan recipes, either by posting them here or by posting a link to the recipe online. It has to be a *recipe* telling people how to prepare the dish, not just a suggestion that a particular dish would be nice to have at Autreat.

 Once recipes are suggested, anyone who thinks xe'd be likely to try that dish if it were on the Autreat menu should try cooking it at home, and report back here about how it is. If you're going to post a recipe review, please prepare the recipe exactly according to directions. If you decide "I don't like garlic so I'll leave that out," or "I like it more spicy so I'll add some jalapenos," or make some other change, then the recipe you make won't be the same thing the  food service staff would make if we request that recipe for Autreat. So if you make changes to a recipe for your own enjoyment, that's fine, just don't post a review of that recipe here. Only post reviews of recipes you prepare exactly as written (except that if you prepare a smaller quantity than the recipe calls for, that's fine as long as you use all the ingredients in the same proportions used in the recipe).

The most popular recipes will be passed along to the chef at the Autreat
venue.

 OK? So how about some recipe recommendations and reviews?

 Some of them do rely on imitation meat products, but it looks like quite a few do not. Anybody want to try any of them and let us know how they turn out?

 Since we also do have GFCF attendees at Autreat, maybe a could of GFCF suggestions as well? I'll be posting a link to this thread to the Autreat list, so unless otherwise stated You shouldn't have to email  Jim directly.

When I was over there I fell in love with Cafe Yumm http://www.cafeyumm.com/about_us.html Apparently you can order their sauces which a an amazing addition any Vegan meal - they are also GF/CF. If you read their menu you can get some ideaas for great tasting food combinations!

I'm so excited that the menu will be all vegan! I'm a gluten-free vegan but I don't cook D= I'm trying to find recipes to suggest though. I recently started baking though, and I'm in love with the Allergen-Free Baker's Handbook, and I highly recommend that book to be used for yummy GF desserts at the conference!
